Quinoa w/ Caramelized Onions & Red Chard

Ingredients

·1 cup quinoa (rinsed with cold water)
·2 cups water
·¼ teaspoon Herbamare, or seasonings of choice
·1 tablespoon extra virgin olive oil
·1 onion, diced
·1 bunch chard, cleaned and chopped
·2 tablespoons extra virgin olive oil
·2 tablespoons lemon juice
·Sea salt & pepper, to taste

Directions

Place quinoa in a heavy pot over high heat and stir until quinoa pops. Add 2 cups water and 1/4 teaspoon Herbamare(or other seasoning) and bring to boil. Cover pan and reduce heat to low for about 20 minutes. Heat a large frying pan over medium heat and add 1 tablespoon of olive oil. When hot, add onion and cook until lightly brown. Add chard and sauté until cooked and wilted, about 8 minutes. When quinoa is done, fluff with a fork. Add vegetables, sea salt, extra virgin olive oil and lemon juice. Taste and adjust seasonings, then serve and enjoy!
